A lovely little article about Fergus Henderson, the man who wrote Nose to Tail Eating. I still haven’t gotten around to reading the book (it was available only in Britain until last year), but I know he’s the man behind marrow bones with parsley salad, a favorite of mine at Prune. So odd to think that at some point not too long ago, marrow bones skeeved me out. But of course once I ate some, I immediately forgot that feeling and now can’t even imagine what I was thinking. Kind of like when I started listening to music with lots of buzzy guitars and feedback…Sure, it seemed a huge leap from Huey Lewis & the News, but once you’ve heard the Pixies, why would you ever go back? Henderson also gives me hope that you can still be a good cook and influential if you’ve got a horrible twitch…if this old-lady palsy of mine ever gets out of control.
